Ingredients
- 1 ½ pounds large shrimp, peeled and deveined
- ¼ cup olive oil
- 3 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- Lemon wedges, for serving
- Wooden or metal skewers
- optional: veggies like onion, squash, or zucchini
Instructions
1. Make the Marinade
In a large bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, oregano, Italian seasoning, paprika, salt, and black pepper.
2. Marinate the Shrimp
Add the shrimp to the bowl and toss until evenly coated. Cover and refrigerate for 20–30 minutes.
3. Prepare the Skewers
If using wooden skewers, soak them in water for at least 20 minutes. Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp. If you’d like, add veggies to the skewers as well.
4. Grill the Shrimp
Preheat a grill or grill pan to medium-high heat. Lightly oil the grates, then cook the skewers for about 2–3 minutes per side, until the shrimp are pink, opaque, and lightly charred.
5. Finish and Serve
Remove the skewers from the grill and sprinkle with fresh parsley. Serve immediately with lemon wedges for squeezing over the top.
