Ingredients
- 8 oz (225 g) pasta (spaghetti, linguine, or penne)
- 2 medium zucchini, thinly sliced or grated
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
- ½ cup grated Parmesan cheese
- Zest and juice of ½ lemon (optional, for freshness)
- Salt and black pepper, to taste
- Fresh basil or parsley for garnish
Instructions
1. Boil the Pasta
Bring a large pot of generously salted water to a boil. Cook the pasta according to the package directions until al dente. Before draining, reserve 1 cup of the pasta cooking water.
2. Sauté the Zucchini
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the zucchini and cook for 5–7 minutes, stirring occasionally, until softened and lightly golden.
3. Build the Flavor
Stir in the minced garlic and red pepper flakes, if using. Cook for about 30 seconds, just until the garlic becomes fragrant.
4. Combine the Pasta
Add the drained pasta to the skillet. Toss everything together, then stir in the Parmesan cheese, lemon zest, and lemon juice. Gradually add reserved pasta water a little at a time until the sauce becomes smooth and lightly coats the pasta.
5. Season to Taste
Season with salt and freshly ground black pepper. Taste and adjust the seasoning as needed.
6. Garnish and Serve
Divide the pasta among serving bowls. Sprinkle with fresh basil or parsley and additional Parmesan cheese before serving immediately.
