Ingredients
- 4 medium russet potatoes
- 2 tbsp olive oil or melted butter
- Salt and black pepper
- 1½ cups shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 2 green onions, thinly sliced
- Sour cream, for serving
- Optional toppings
- Jalapeño slices
- Diced tomatoes
- Chives
- Ranch dressing
- Pulled pork
- Buffalo chicken
Instructions
1. Bake the Potatoes
Preheat the oven to 400°F. Scrub the potatoes, prick them several times with a fork, and bake for 45–60 minutes, or until tender. Let them cool enough to handle.
2. Prepare the Skins
Cut each potato in half lengthwise. Scoop out most of the potato flesh, leaving about ¼ inch attached to the skin. Brush the potato skins with olive oil or melted butter and season with salt and pepper.
3. Crisp the Skins
Place the potato skins skin-side up on a baking sheet and bake for 10 minutes. Flip them over and bake for another 5–10 minutes, until golden brown and crispy.
4. Add the Toppings
Fill each potato skin with shredded cheddar cheese and crumbled bacon. Return them to the oven and bake for 3–5 minutes, or until the cheese is melted and bubbly.
5. Garnish and Serve
Top the hot potato skins with sliced green onions, a dollop of sour cream and other toppings of your choice. Serve immediately while they are crispy and warm
